TASTING NOTES
Zesty and fresh, followed by a fusion of fig and passion fruit aromas. The introduction is crisp, clean and concentrated. The Carmen Stevens Sauvignon Blanc displays a tremendous balance between fruit expression, a depth in character and a zesty acidity that offers a sense of fullness on the palate. A beautiful example of a Sauvignon Blanc from one of the cooler climate regions in South Africa.
WINEMAKING NOTES
All fruit is hand-sorted and destemmed. Dry ice is used as protection to preserve the purity of the fruit. High natural acidity and very cold temperatures result in successful grape juice settling overnight. Clean juice is then split into 4 batches resulting in 4 different fermentation options – with the smallest being a barrel-fermented portion. Lees stirring are employed on all 4 batches to help build on the palate depth.
VINEYARD NOTES
The fruit is grown under the Cape Town wine of origin classification. The fruit selection comes from 2 parts in the same vineyard block. Resulting in 2 different ripeness levels ensuring the freshness expected from Sauvignon Blanc and fullness that is not the norm with Sauvignon Blanc. All fruit is handpicked.
FOOD PAIRING
The Sauvignon Blanc pairs beautifully with sushi, especially with salmon, and various other seafood dishes.
AGEING POTENTIAL
The Sauvignon Blanc is ideal at present. However, with its zesty acidity and depth of palate, it may way exhibit the aging potential of up to 4-5 years.
